RECIPE: Veggie Three Egg Scramble

The purpose of this recipe is to provide an inexpensive recipe that you can quickly make and have it fit into your macronutrient needs for the day. 

Note: Using a non stick cooking spray can replace the butter if you want an even lower calorie allotment, however, I like butter, so this recipe includes butter. 

Ingredients: 
Butter, 1tbsp (or, for less Kcal, non stick cooking spray
Mixed Veggies of choice, 1 cup
Eggs, 3 whole
Sea Salt, to taste
Pepper, to taste
Tomato Ketchup, 2tbsp

Makes 1 Serving: 
39g Carbs
28g Fat
28g Protein
535 Calories
Estimated Cost per serving $1.05-$1.75


Step 1: Melt the butter in a sauté pan over medium heat. Add vegetables to the pan and sauté for about 5 minutes until tender.

Step 2: Add the eggs and salt and pepper to the pan.

Step 3: Scramble until the mixture is cooked to desired doneness.

Step 4: Serve with ketchup, if desired. Enjoy!
