Healthy Recipe: Veggie, Chicken, and Flax Salad
This recipe makes 1 serving. A great meal to add to your meal plan. Double or triple the ingredients and save for the next day if you like!
1 Serving Nutrtion Facts:
Chicken Breast, 2 ounces
Spinach, 1 cup chopped
Romaine, .5 cup shredded/chopped
Tomatoes, 1 whole, chopped
Red Bell Pepper, 1 whole, chopped
Carrots, Raw, 1 medium
Parmesan Cheese, shredded, 1tbsp
Flaxseeds, ground, 1 tbsp
Olive Oil, 2tsp
Step 1: Cook Chicken. Pound out chicken breast a bit to the same thickness using a kitchen mallet or something similar. Cook in a nonstick pan over medium heat with about a tsp of olive oil, about 4 minutes per side or until cooked through completely without any pink in the middle. Chop chicken into small pieces.
Step 2: Mix 1 cup spinach, 1 chopped tomato, 1 chopped small bell pepper, 1 medium chopped carrot, 1 Tbsp grated Parmesan cheese, 1 Tbsp ground flaxseed, and 1 tsp of olive oil.
Step 3: Eat.
